The rich flood plain, fertile has very early on, fostered humain settelment and occupation,that can be traced back to the Neolitic period, as we can witness today with the Bassanel Oppidum, frm the VIth century BC. This geographic location and topography implies a form of protection for the village. The oval shape of Olonzac, called the « circulade », is an evidence of a former bulwark, with only a few ruins remain today. This itinerary invites you to wander in those little streets and discover their history. At the XIXth century, Olonzac knew a major evolution with the wine culture. The winemakers labored this fertile plain and shaped the surrounding landscape (Miraille). The wine economy florrished, and Olonzac knew a real economic development. The historical center spread to the wine houses and mansions. After the outskirts of town, on the way to Cesseras, is the Miraille Hill, surrounded by vineyards and dry stones constructions.
